The Scoville scale was invented by Wilber Scoville in 1912 as a way to measure just how hot different chili peppers were. What is being measured is capsaicin, the chemical in peppers that makes them spicey. The more capsaicin that is present, the hotter the pepper and the higher the number on the Scoville scale.
